Anti - Inflammatory Dressing
Summer is here. A great time to bring some extra vibrant superfood recipes into play to give us an immune boost for the summer months. These two recipes go well with light, summer eating - alongside salads, BBQ's and rice or quinoa dishes.
It is the blend of avocado and ground turmeric in the first recipe which gives it that lime green glow. Great for the skin as well as containing a group of foods known to offer anti-inflammatory properties; garlic, olive oil and turmeric.
Anti-Inflammatory Turmeric Dressing
4 tablespoons olive oil
Juice and zest of one lemon
1/4 of an avocado
1 clove of garlic minced
1 tablespoon of ground turmeric
1 tablespoon of honey - raw if possible
pinch of sea salt
Blend all ingredients into a smooth paste
Immune Boosting Pesto
This second one I made for lectures at The College of Naturopathic Medicine earlier this week in London and Brighton. The recipe is a delicious example of how several superfoods can be blended into one powerful and punchy pesto.
Blend 2 cups of coriander, 1/2 cup of parsley, 1 large crushed garlic clove, pinch of sea salt, 1/4 cup of extra virgin olive oil, 1/4 cup of walnuts, 2 teaspoons of lemon juice, sprinkle of chilli flakes and pepper to taste.
Delicious with vegetarian or vegan foods or alongside fish or poultry dishes.
