Sweet potato disks with mango dressing, mint and black sesame seeds.
I love days when I’m prepping for a foodie workshop. Decided to create something with a summery vibe, an original taste with a super zingy feel – I’m focussing on ‘turmeric’ – one of my ‘Age well’ ingredients for this evenings workshop.
Inspired by a plump yellow mango begging to be bought from the grocers, I’m craving those more Asian tastes of lime, chilli and spices on a hot day. Blended a few strips of this mango up with olive oil, the juice of half a very juicy lime, a teaspoon of lemon zest, chilli flakes, a teaspoon of turmeric powder and some freshly ground black pepper and sea-salt.
